Simple High-Protein 6 ingredient Gluten-Free Granola

This high-protein granola is super simple and requires ingredients you probably have in your pantry. It’s quick, simple, and of course perfectly sweet (using only natural sweeteners).

This gluten-free granola is also dairy-free and can easily be made vegan with a few substitutions.

What You Need For Healthy High-Protein Gluten-free Granola

  • Your favorite natural nut-butter (yes- we’re talking the drippy stuff- other peanut butter like Jif may not work since it has added ingredients that alters it’s texture)
  • Vegan plant-based butter of choice (I used Earth Balance)
  • Honey (or maple syrup for vegan)
  • Vanilla extract
  • Certified Gluten-Free rolled oats (I get mine from Trader Joe’s since they’re the cheapest)
  • Collagen peptides (omit for vegan)
  • Your Favorite Dairy-free (or vegan) Chocolate chips
  • Your favorite nuts (I used honey roasted peanuts)
  • Cinnamon
  • Sea Salt

How To Make That Perfect CRUNCH

  • Remember to flip! Both sides of the granola should be flipped half-way through. This makes the granola bake evenly, making both sides of the granola as crunchy as it can be!
  • Watch the oven! Granola can get burnt very easily if you take your eyes off of it or forget to flip it. Once you see the granola turn golden brown, give it a good flip!
  • Let the granola cool for at least 45 minutes. The granola hardens when it cools so this is a critical step!

A Note To Remember about Natural Granola

Since this is natural granola, it will not be as crunchy as the typical store brand that has sugar cane and other preservative ingredients.

Description

High-protein Gluten-Free Granola made with simple ingredients. This go-to recipe can be made in a snap!


Ingredients

Scale
  • 2 tbsp natural peanut butter (The drippy kind)
  • 2 tbsp melted vegan butter of choice ( I used the Earth Balance brand)
  • Heaping 1/4 cup honey
  • 1 tsp. vanilla extract
  • 2 cups Certified Gluten-Free rolled oats
  • 2 scoops of collagen (2 scoops = 2 servings for the collagen peptides I used)
  • 3/4 cup chopped honey-roasted peanuts 
  • 1 tsp. cinnamon
  • 1/2 tsp. sea salt
  • 1/3 cup chocolate chips

Instructions

  1. Preheat the oven to 350 F and spray a large baking sheet with non-stick spray. You can also use parchment paper.
  2. Combine all the ingredients in a large bowl, except for the chocolate chips. Mix everything well so that the granola is evenly coated in the honey and that there are no dry areas.
  3. Transfer the granola to the large baking sheet and spread it out into an even layer. A trick that works for me is hitting the baking sheet on the counter a few times. It makes the granola spread easier across the baking sheet.
  4. Bake for 25-30 minutes, flipping the granola halfway through. When the granola is done baking it should appear golden brown
  5. Let the granola cool for at least 45 minutes.
  6. Break the granola into clumps once cooled.
  7. Sprinkle the chocolate chips into the granola.
  8. Store in an air-tight container at room temp for about 1 week.

What Do I Need To Make The Apple Crisp

In addition to a large ramekin or a small pot similar to the one I have, you will need the following ingredients:

  • Your favorite apples
  • Oats
  • All purpose flour
  • Nuts
  • Cinnamon
  • Lemon Juice
  • Vegan Butter
  • Sea salt

I went with Red Delicious apples, but you can honestly pick your favorite. if you are going for more of a fall vibe, then I would recommend Honeycrisp.

For The Apples

For this all you will need is a small bowl of diced apples.

To bring out the sweetness of the apples, coat them in lemon juice, brown sugar, and a pinch of salt.

For the Crumble

What would a Gluten Free Apple Crisp be without a crispy crumble?

It’s simple! In a small bowl, mix the coconut sugar, cinnamon, oats, all purpose flour, and chopped nuts. Then, melt the vegan butter in the microwave and add it to the small bowl. Be sure to break up the large clumps.

The gluten free flour you use may affect the amount of butter the crumble soaks up, which is why I recommend using Bobs red Mill 1:1.If you find the crumble is too wet, add more oats or flour (potentially both depending on how wet it is) until the mixture becomes drier.

After that, bake at 350 for 50-60 minutes, until the crumble is golden brown and serve with your favorite vanilla dairy free ice cream for the ultimate treat.

Description

A Simple and Healthy Gluten Free and Dairy Free Crunchy Apple Crisp that is the perfect shareable size. It may be so good, you may not even want to! 


Ingredients

Scale
  • 2 Medium-sized apples (or 34 small ones)
  • 6 Tbsp quick oats
  • 1/4 cup all purpose gluten free flour (I used Bobs 1:1 All purpose gluten free flour)
  • 3 Tbsp chopped nuts ( I chose Pistachios, but any nut will do)
  • 1 tsp cinnamon
  • 1 1/4 tsp lemon juice
  • 1 tsp water
  • 34 Tbsp melted vegan butter (I used whipped butter)
  • 34 Tbsp coconut sugar (depending how sweet you like it)
  • Dash of sea salt

Instructions

  1. Chop the apples into small pieces and place them in a small bowl.
  2. Add the lemon juice, 1 Tbsp coconut sugar, 1/2 tsp cinnamon, water and sea salt together in the small bowl and mix until the apples are coated.
  3. Place your coated, diced apples into a large ramekin or similar container.
  4. Combine the remaining ingredients (except for the melted butter) together in a small bowl and mix the ingredients thoroughly in a small bowl.
  5. Add the melted butter to the small bowl and break up any clumps. You may need to add a little more flour or oats depending on the flour you used. 
  6. Pour the crumble over the apples in the baking dish and bake in an oven at 350 for 50-60 minutes. If you prefer a crispy crumble I would bake it at the higher end of that range.
  7. Serve hot with your favorite dairy free ice cream and drizzle honey for added flavor.

Notes

*You can add more apple if you would like, just be sure to have a larger dish on hand. I am more a crumble fan than an apple fan so feel free to adjust as you see fit.
*You can attempt to reduce the butter and coconut sugar by 1 Tbsp, but your crumble may not as strong of a butter  or sweet taste.
*As with all my recipes, this is a rough estimate of the nutrition label. I used whipped butter, and 3 Tbsp of coconut sugar to calculate this.
