  1. Add all ingredients, except the mini chocolate chips into a blender
  2. Preheat the oven to 350 and spray a muffin pan with non-stick spray
  3. Fold in the chocolate chips and pour into 10 muffin liners 3/4 the way
  4. Bake for 21-24 minutes and test them with a toothpick once complete to ensure they are baked throughout.
  5. Let cool for 5 minutes and pack in an airtight container for the work week.
